One-Eyed Jacks
4 slices of break
3 tablespoons unsalted butter
4 large eggs
kosher salt & pepper
cut a 2-inch hole in the center of each slice of bread. In a large saute pan, heat butter over med-high heat until the foaming subsides. Arrange the bread slices in the pan and cook until golden brown on one side, about 2 minutes. Turn the bread over and crack an egg into the center of each. Sprinkle with salt 7 pepper and cook for 1 minute. Reduce the heat to low, and cook the eggs to desired doneness, turning again if you like.
