Strawberry Limeade
Juice of 12 Limes - plus 1 Lime sliced for garnish
1 16-oz bag Frozen Strawberries
3/4 c. sugar
Pour the lime juice into a blender. Add the strawberries and sugar and blend until smooth. Add 6 cups cold water and blend again until well mixed. Pour into glasses (preferably chilled) and garnish with the lime slices....add vodka if you like!

This Sunday, make the Neiman Marcus Chicken Salad Sandwich for your family or friends.....you won't be sorry!
3 c. diced poached chicken breast
1 tbs. cider vinegar
3/4 c. mayo
3 tbs. heavy cream
1 1/2 tsp. sea salt
1/8 tsp. freshly ground white pepper
fold all above ingredients together and top bread with chicken salad, slice of lettuce, tomato and onion.
*it's also great on a cheese biscuits or cheese bagels.

Baby Spinach with Mozzarella, Parmesan Cheese and Garlic.
1 ball of fresh pizza dough
1/2 c. pizza sauce...(you should come in and get the sauce by The Roving Stove)
1 c. grated mozzarella cheese
3 c. fresh baby spinach
4-6 cloves of garlic peeled
extra virgin olive oil
sea salt
1/4 c. grated Parmesan cheese
roll dough out 8"-10"
spoon sauce on top of pizza sprinkle with mozzarella cheese....set aside.
in a small pot fill with salted water and boil to high heat. When boiling, add spinach and let cook for 1 minute. drain spinach and press between 2 sheets of paper towels to dry. Add wilted spinach to pizza along with the whole garlic cloves.
Bake for several minutes at a pre-heated 450. Turn in between for even cooking. Using a pizza stone will give you the best result.
Remove pizza from oven at desired crispiness...Drizzle with olive oil and sprinkle sea salt and Parmesan cheese over top.

Ok, so I ordered this cookbook and when it came in I didn't take a look at it.....well, I finally did and I am so impressed! There are so many great recipes for "optimal health", and because I have been on a little health kick.....I bought a copy right away!
Grilled Corn Salad with Green Beans & Tomatoes
Ingredients
1 teaspoon Dijon mustard
3 tablespoons sherry vinegar
1/4 cup extra virgin olive oil
Salt and pepper
4 ears corn, grilled
1 pound green beans, blanched and cooled
1 pint cherry or grape tomatoes, halved
1/2 red onion, thinly sliced
1 cup basil leaves, thinly shredded
4 ounces ricotta salata, shaved
Method
Prepare vinaigrette by whisking together mustard, vinegar, oil, salt and pepper. Set aside. Cut kernels off corn cobs and put in a large bowl. Add beans, tomatoes, onion and basil. Drizzle vinaigrette over and toss to combine. Top with ricotta salata and serve.
